World Diabetes Day

Hello all you sugar lovers!!!

Today is World Diabetes Day. Check out these web links for further information about diabetes.
  • It is estimated that approx 191,000 people in Ireland have Diabetes. WOW! that's almost the same as the population of Dun laoghaire Rathdown!(pop.194k) 
  • 366 million people worldwide have diabetes compared with 30 million 25 years ago. (source: www.diabetes.ie, 2011) 
  • The rise in type two diabetes is directly linked to poor diet (too much sugar and fat, too little fibre) and inactive lifestyles. 
  • As the SafeFood advert reminds us we can stop the spread by sticking to a healthy diet low in refined foods and high in fruit and vegetables and wholegrain foods. Everybody young and old should be physically active for about 30 minutes every day. 
  • This means raising the heart rate by doing cariovascular excercise such as running aerobics or football to name just a few options. Check out this site for more advice and ideas about getting active. http://www.getirelandactive.ie/

The Fashion Show Student Committee

A BIG THANK YOU!!!!!!!!!! to all the students who responded to the call for committee members to help with this years Wesley College Fashion Show. We've had a fantastic response from you and no doubt we will have no shortage of highly motivated and willing students to participate in the running of the fashion show. We are delighted that there's such a keen interest to get involved and help out with this event especially as the proceeds go towards Habitat and the school hockey and rugby tours. We look forward to announcing the committee by the end of next week. We also have lots of roles for those that don't make the 10 member committee but are still willing to get involved and help out with the event. Watch this space.............

Rain Rain go away!!!!!!

What a wet week in Dublin???

With buckets of rain failing outside the best thing to do is stay home and cook up a storm in the kitchen.......... This weeks recipe is seasonal.....Pumpkin Soup!

Pumpkin flesh is being carved up by lots of people in the run up to Halloween, why not put some of this delicious vegetable to good use! I tried this recipe last night and it's really tasty!



Pumpkin Soup
100g butter
2 leeks
1 litre veg stock
1.5kg pumkin flesh
250g spinach
30g peas
300ml cream
1/4 tsp nutmeg
Salt and pepper

Fry the leeks gently in melted buter for 10 minutes.
Peel and chop the pumpkin up removing seeds in the process. (dry and roast if you have the time)
Add the pumkin, nutmeg, stock and simmer for approx 30 minutes.
Add the peas and spinach, cook for about 5 minutes then stir in the cream. Season to taste.
Enjoy!

The Wesley College Fashion Show 2012: Looking for Senior Cycle Volunteers

WESLEY COLLEGE FASHION SHOW STUDENT COMMITTEE


Wesley College Fashion Show is taking place again this year and we are looking for senior student volunteers particularly from the TY Fashion Modules to form a committee to help out with the organisation and running of the show from now until the 8th March.

The proceeds of the show will go to Habitat for Humanity and the school Hockey and Rugby development tours. Initially this committee work won’t be a big time commitment but you will be needed to help out frequently in the week or two prior to the Fashion show and you must be free on the night. The show takes place on the 8th March (a Thursday night) The Show takes quite a bit of work to organise so your help is vital to its success.

Management: Ms. O’Dohoghue and Ms. Fallon will be managing the event.

The Wesley Weekly Recipe

Its September and its gotten quite cold already so its nice to enjoy a comforting bowl of pasta. Spinach is in season, its packed with Iron, important for healthy blood and preventing anaemia. Check out this tasty recipe!



Spinach fiorelli with gammon and mascarpone
By Lindsey Bareham
Serves 2


Prep: 10 min


Cook: 15 min


150g fiorelli or other frilly egg pasta
50g young spinach
1 trimmed leek, approx 100g
25g butter
1 tbsp olive oil
1 gammon steak, approx 150g
2 tbsp mascarpone
2 tbsp grated Parmesan
1 lemon

Method
Cook the pasta in plenty of boiling water according to packet instructions – about 10 minutes – adding the spinach for the last minute of boiling. Drain, return to the pan and toss with half the butter, 1 tbsp Parmesan and 1/2 tbsp mascarpone.


Meanwhile, trim the leek and slice into pennies about 1cm wide. Agitate in a bowl of cold water, drain and shake dry. Melt half the remaining butter with 1 tbsp olive oil in a frying or sauté pan over a medium-low heat. Stir in the leek, season generously with salt, stir again, cover the pan and leave to soften for 5 minutes. Slice the gammon into strips about 4cm x 1cm. Stir the gammon into the leeks, toss around in the buttery juices for a couple of minutes until all the pieces have changed colour and cooked through. Stir the contents of the pan into the pasta. Serve scattered with Parmesan, a dollop of mascarpone and a lemon wedge to squeeze over the top.

Reminders!!!!!!!!!!!

Hi to all our Home Ec Students!

Hope you are all having a great summer break. Just over two weeks left now so make the most of your free time!

This is just a gentle reminder to all the students going into Third Year. We are about to start the craftwork project and need to have the materials ready on return to school on the 29th August. If you have any queries write them here on the blog and I'll do my best to respond promptly.

In case your parents have a lot of expense at this time of year remember that you can always recycle materials you have at home, particularly if it's 100% cotton. This is HOME ECONOMICS after all!!!
